Fish Preparation

    Prepare the Fish

    Rinse and pat dry the seasonal fish fillets. Season with salt and pepper.

    Bread the Fish

    Set up a breading station with three bowls: one for flour, one for beaten eggs, and one for breadcrumbs. Dredge each fish fillet in flour, dip in beaten eggs, and then coat with breadcrumbs.

    Grill the Fish

    Heat olive oil in a grill pan over medium heat. Grill the breaded fish fillets for about 3-4 minutes on each side, or until golden brown and cooked through. Remove from heat and set aside.

Topping

    Prepare the Topping

    In a mixing bowl, combine diced tomatoes, capers, diced oranges, diced celery, and chopped red onion. Drizzle with lemon juice and olive oil, then toss to combine.

    Top the Fish

    Once the fish is grilled, spoon the prepared topping generously over each fillet.

Linguine

    Cook the Linguine

    In a large pot, bring salted water to a boil. Add the linguine and cook according to package instructions until al dente. Drain and set aside.

    In a saucepan over medium heat, warm the tomato sauce. Add chopped fresh basil, and season with salt and black pepper to taste.

    Combine and Serve

    Toss the cooked linguine with the tomato sauce. Serve the linguine on a plate, topped with grilled fish and the fresh topping.
