Cooking the Pasta

Boil the Pasta
In a large pot, bring salted water to a boil over high heat. Add the fettuccine pasta and cook according to package instructions until al dente, usually about 8-10 minutes. Stir occasionally to prevent sticking.

Drain the Pasta
Once the pasta is cooked, reserve 1 cup of the pasta water and then drain the pasta in a colander. Set aside.
Making the Alfredo Sauce

Melt the Butter
In a large saucepan over medium heat, melt 1 cup of unsalted butter.

Add Garlic
Once the butter is melted, add 4 minced garlic cloves to the pan and sauté for about 1-2 minutes until fragrant, being careful not to burn the garlic.

Add Heavy Cream
Pour in 2 cups of heavy cream, stirring constantly. Allow the mixture to simmer gently for about 5 minutes.

Incorporate Cheese and Seasoning
Gradually whisk in 1 cup of grated Parmesan cheese, 1 tsp of salt, 1 tsp of black pepper, and 1 tsp of grated nutmeg. Stir until the cheese is melted and the sauce is smooth.
Combining Pasta and Sauce

Combine Pasta with Sauce
Add the drained fettuccine to the Alfredo sauce in the saucepan. Toss to coat the pasta evenly in the creamy sauce. If the sauce is too thick, add reserved pasta water a little at a time until the desired consistency is reached.
Serving

Garnish and Serve
Serve the Pasta Alfio hot, garnished with 1/4 cup of chopped fresh parsley and extra grated Parmesan cheese on top. Enjoy!
