Prepare the Mozzarella
Drain the fresh mozzarella balls and pat them dry with paper towels. Cut each mozzarella ball in half if they are large.

Set Up Breading Station
Place the all-purpose flour in a shallow dish, whisk the eggs in another shallow dish, and place the bread crumbs mixed with grated Romano cheese, salt, and black pepper in a third shallow dish.

Coat the Mozzarella
Dredge each mozzarella piece in flour, shaking off the excess. Dip it into the beaten eggs, ensuring it's fully coated, then roll it in the bread crumb mixture, pressing gently to adhere.

Repeat
Repeat the coating process for all mozzarella pieces and place them on a baking sheet lined with parchment paper.
Frying

Heat the Oil
In a deep skillet or Dutch oven, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Mozzarella
Carefully add the breaded mozzarella pieces to the hot oil in batches, ensuring not to overcrowd the pan. Fry for 2-3 minutes or until golden brown and crispy.

Drain
Using a slotted spoon, remove the mozzarella fritti and place them on a plate lined with paper towels to drain excess oil.

Simmer
Add the canned crushed tomatoes, dried oregano, salt, pepper, and fresh basil leaves. Stir well and let it simmer for 15-20 minutes, allowing the flavors to meld.

Serve
Place the hot mozzarella fritti on a serving plate, drizzle with Maggie's sugo, and sprinkle with additional grated Romano cheese if desired. Serve immediately.
