Make the Dough
In a large bowl, combine the flour and salt. Create a well in the center and add the eggs and olive oil. Mix together with a fork until combined, then knead the dough for about 5-10 minutes until smooth. Wrap in plastic wrap and let it rest for 30 minutes.

Prepare the Filling
In a mixing bowl, combine ricotta cheese, Parmesan cheese, mozzarella cheese, egg yolk, nutmeg, and salt. Mix until well combined and set aside.

Assemble Ravioli

Roll and Fill the Dough
Roll out the rested dough on a floured surface until thin. Cut into squares or circles. Place a small spoonful of cheese filling in the center of each square. Fold the dough over and seal the edges with a fork. Repeat until all filling is used.

Cook the Ravioli
Bring a large pot of salted water to a boil. Carefully drop the ravioli into the boiling water and cook for about 4-5 minutes or until they float to the surface. Remove with a slotted spoon.
Serve

Plate the Dish
In a serving plate, add a generous amount of Maggie's sugo. Top with the cooked ravioli. If desired, add sliced Italian sausage, meatballs, or meat sauce on top. Garnish with additional basil or grated Parmesan cheese.
