Preparing Chicken Fingers

    Cut the Chicken

    Slice the boneless, skinless chicken breasts into finger-sized strips, about 1 inch wide.

    Set Up Breading Station

    In three separate bowls, place the flour in the first bowl, beat eggs in the second bowl, and mix the Italian breadcrumbs, grated Parmesan cheese, Italian seasoning, salt, and black pepper in the third bowl.

    Bread the Chicken

    Dredge each chicken strip in flour, shaking off excess, then dip into the beaten eggs, and finally coat with the breadcrumb mixture. Press gently to adhere.

    Heat Olive Oil

    In a large skillet, heat olive oil over medium heat until shimmering.

    Cook the Chicken Fingers

    In batches, add the breaded chicken fingers to the skillet and cook for 4-5 minutes on each side or until golden brown and cooked through. Remove and place on a paper towel to drain excess oil.

    Wash and peel the potatoes, then cut them into thin strips to form fries.

    In a large bowl, toss the potato strips with olive oil, salt, black pepper, garlic powder, and paprika until evenly coated.

    Preheat the oven to 425°F (220°C). Spread the seasoned fries in a single layer on a baking sheet lined with parchment paper. Bake for 25-30 minutes, flipping halfway through, until crispy and golden.
