Maggie's Sugo
Method
Cooking Pasta

Boil Water
Fill a large pot with water, add salt, and bring it to a rolling boil over high heat.

Cook Pasta
Add the pasta to the boiling water and cook according to the package instructions until al dente, usually about 8-10 minutes.

Drain Pasta
Once cooked, reserve a cup of pasta water, then drain the pasta in a colander and set aside.
Making Maggie's Sugo

Heat Olive Oil
In a large skillet, heat 2 tablespoons of olive oil over medium heat.

Add Tomatoes and Spices
Stir in the crushed canned tomatoes, dried oregano, dried basil, sugar, salt, and black pepper. Simmer the sauce for 15-20 minutes, stirring occasionally.

Combine Pasta and Sugo
Once the sugo is thickened, add the drained pasta to the skillet. Toss to combine. If the sauce is too thick, add a bit of reserved pasta water until desired consistency is reached.
Serving

Plate the Dish
Serve the pasta hot, garnished with grated Parmesan cheese on top.
