Pesto Ravioli

Gorgonzola Cream Sauce

Prepare Pesto Ravioli

    Cook the Ravioli

    In a large pot of salted boiling water, add the ravioli and cook according to package instructions (usually about 3-5 minutes for store-bought). Once cooked, drain and set aside.

    Mix with Pesto

    In a large bowl, toss the cooked ravioli with the pesto until well coated. Set aside.

Make Gorgonzola Cream Sauce

    Prepare the Sauce

    In a saucepan over medium heat, melt the butter. Add minced garlic and sauté until fragrant, about 1 minute.

    Add Cream and Cheese

    Pour in the heavy cream and stir in the gorgonzola cheese. Cook, stirring constantly, until the cheese has melted and the sauce is smooth. Season with salt and black pepper to taste.

Prepare Diablo Sauce

    Sauté Shrimp

    In a skillet over medium heat, add olive oil. Once hot, add minced garlic and sauté for 30 seconds. Add the shrimp and cook until they turn pink, about 2-3 minutes per side.

    Add Diablo Sauce Ingredients

    Stir in the crushed red pepper flakes and tomato sauce. Simmer for about 5 minutes. Add lemon juice and season with salt to taste.

Assemble the Dish

    Combine Everything

    On a serving plate, place a generous portion of pesto ravioli. Drizzle the gorgonzola cream sauce over the ravioli. Place the jumbo shrimp on top and spoon the diablo sauce over the shrimp.

    Serve

    Garnish with fresh basil or parsley if desired, and serve immediately.
