Amogio Topping Preparation

    Prepare the Amogio

    In a small bowl, mix together olive oil, minced garlic, lemon juice, chopped parsley, chopped basil, salt, and black pepper. Set aside to allow the flavors to meld.

Pasta Cooking

    Cook the Pasta

    In a large pot, bring water to a boil. Add salt to the boiling water and then add the pasta. Cook according to package instructions until al dente. Drain and set aside.

Maggie's Sugo Preparation

    Make the Sugo

    In a large saucepan, heat olive oil over medium heat. Add diced onion and sauté until translucent, about 5 minutes. Stir in minced garlic and sauté for an additional 1 minute until fragrant. Add crushed tomatoes, oregano, salt, and black pepper. Bring to a simmer and cook for 20-25 minutes, stirring occasionally. Stir in the fresh basil just before serving.

Serving

    Assemble and Serve

    On a plate, serve a portion of pasta topped with Maggie's sugo. Drizzle the prepared amogio over the top and enjoy your Garozzo!
