Method

Cooking the Pasta

    Boil Water

    In a large pot, bring water to a rolling boil. Add 1 tablespoon of salt to the water.

    Cook Fettuccine

    Add the fettuccine to the boiling water and cook according to package instructions until al dente, usually about 8-10 minutes.

    Drain Pasta

    Once cooked, reserve 1 cup of pasta water, then drain the fettuccine in a colander.

Making the Sauce

    Melt Butter

    In a large skillet over medium heat, melt the butter.

    Add Garlic

    Add the minced garlic to the skillet and sauté for about 1 minute until fragrant, being careful not to burn it.

    Add Cream

    Pour in the heavy cream and stir to combine. Allow it to simmer for about 2-3 minutes.

    Add Cheese

    Gradually add the grated Parmigiano-Reggiano cheese, stirring continuously until the cheese is melted and the sauce is creamy.

    Season Sauce

    Season the sauce with black pepper, nutmeg, and salt to taste.

Combining Pasta and Sauce

    Combine

    Add the drained fettuccine to the sauce in the skillet. Toss well to coat the pasta with the sauce. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.

    Garnish and Serve

    Plate the fettuccine and garnish with chopped fresh parsley and extra Parmigiano-Reggiano cheese, if desired. Serve immediately.
