Crust Preparation

    Make the Crust

    Preheat the oven to 350°F (175°C). In a mixing bowl, combine chocolate cookies, melted unsalted butter, and granulated sugar. Stir until well combined.

    Form the Crust

    Press the mixture firmly into the bottom of a 9-inch springform pan. Bake for 10 minutes, then remove from the oven and let it cool completely.

Fudge Layer Preparation

    Make the Fudge Layer

    In a saucepan over low heat, combine semi-sweet chocolate chips, heavy cream, and butter. Stir until melted and smooth.

    Add to Crust

    Pour the fudge mixture over the cooled crust and spread it evenly. Place in the refrigerator to set for about 30 minutes.

Chocolate Mousse Preparation

    Melt the Chocolate

    Melt dark chocolate in a microwave-safe bowl or over a double boiler until smooth. Allow it to cool slightly.

    Whip the Cream

    In a separate bowl, whip heavy cream and granulated sugar until stiff peaks form.

    Gently fold the melted chocolate into the whipped cream until fully combined.

    Whip Egg Whites

    In a clean bowl, beat egg whites until stiff peaks form. Gently fold the egg whites into the chocolate mixture.

    Spread the chocolate mousse over the fudge layer and refrigerate for 1 hour to set.

White Chocolate Mousse Preparation

    Melt white chocolate in a microwave-safe bowl or over a double boiler until smooth. Allow it to cool slightly.

    In another bowl, whip heavy cream and powdered sugar until stiff peaks form.

    Gently fold the melted white chocolate into the whipped cream until fully combined.

    In a clean bowl, beat egg whites until stiff peaks form. Gently fold the egg whites into the white chocolate mixture.

    Spread the white chocolate mousse over the chocolate mousse layer. Refrigerate for at least 2 hours or until fully set.
