Method

Cake Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 425°F (220°C). Grease four ramekins with butter and dust with cocoa powder, tapping out the excess.

  2. 2

    Mix Dry Ingredients

In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, unsweetened cocoa powder, baking powder, and salt until well combined.

  3. 3

    Melt Butter

In a microwave-safe bowl, melt the unsalted butter in the microwave in 30-second intervals until completely melted. Let it cool slightly.

  4. 4

    Combine Wet Ingredients

In a separate bowl, whisk the eggs and vanilla extract. Add the melted butter and mix until thoroughly combined.

  5. 5

    Combine Wet and Dry Mixtures

Pour the wet mixture into the dry mixture and stir until just combined. Do not over-mix.

  6. 6

    Fill Ramekins

Divide the batter evenly among the prepared ramekins, filling each about 2/3 full.

Ganache Preparation

  1. 7

    Prepare Ganache

In a small saucepan, heat the heavy cream over medium heat until it just begins to simmer. Remove from heat and add the semi-sweet chocolate, stirring until completely melted and smooth.

  2. 8

    Add Ganache to Ramekins

Using a spoon, place a small amount of the ganache filling into the center of each filled ramekin. Then, cover with remaining batter if necessary.

Baking

  1. 9

    Bake the Cakes

Place the ramekins on a baking sheet and bake in the preheated oven for 12-14 minutes, or until the edges are firm but the center remains soft.

  2. 10

    Cool and Serve

Remove from the oven and let cool for 1 minute. Carefully invert each ramekin onto a plate and serve immediately for the best oozy effect.
