Chicken Marinade

Basil Pesto Sauce

Method

Preparing Chicken and Marinade

  1. 1

    Marinate the Chicken

In a mixing bowl, combine olive oil, lemon juice, minced garlic, dried oregano, salt, and black pepper. Add the boneless chicken breasts and coat them well with the marinade. Cover the bowl and let it marinate in the refrigerator for at least 30 minutes, or up to 4 hours for better flavor.

Preparing Vegetable Skewers

  1. 2

    Prepare Vegetables

While the chicken marinates, prepare the vegetables. Cut bell peppers, red onion, zucchini, and wash the cherry tomatoes. Thread the vegetables onto skewers, alternating between each type to create a colorful presentation.

Making Basil Pesto

  1. 3

    Blend Pesto Ingredients

In a food processor, combine fresh basil leaves, pine nuts, grated Parmesan cheese, and minced garlic. Blend until finely chopped. With the processor running, slowly drizzle in olive oil until the mixture is smooth. Add salt to taste and blend briefly to combine.

Grilling Chicken and Vegetables

  1. 4

    Grill the Skewers

Preheat your grill to medium-high heat. Remove the chicken from the marinade and thread it onto skewers, alternating with the vegetable skewers. Grill for about 10-15 minutes, turning occasionally, until the chicken is cooked through and the vegetables are tender and slightly charred.

Serving

  1. 5

    Serve with Pesto

Remove the skewers from the grill and serve immediately with the freshly made basil pesto drizzled over the top or on the side for dipping.
