    Prepare the Chicken

    Preheat the oven to 400°F (200°C). Begin by placing the chicken breasts between two sheets of plastic wrap. Use a meat mallet or rolling pin to pound them to an even thickness of about 1 inch.

    Set Up Breading Station

    In three separate shallow bowls, place the flour in the first bowl, whisk the eggs in the second bowl, and add the breadcrumbs, salt, and pepper to the third bowl.

    Bread the Chicken

    Dredge each chicken breast in the flour, shaking off the excess, dip into the beaten eggs, and then coat with the breadcrumb mixture. Ensure each piece is thoroughly coated.

    Fry the Chicken

    In a large skillet, heat the olive oil over medium heat. Once hot, carefully add the breaded chicken breasts and fry for 4-5 minutes on each side, or until golden brown and cooked through. Remove from the skillet and place on a paper towel-lined plate to absorb excess oil.

    Make the Sugo

    In a saucepan, heat 2 tablespoons of olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute. Add the crushed tomatoes, oregano, salt, and pepper, stirring well. Simmer for 15-20 minutes, allowing the flavors to meld.

    Add Fresh Basil

    Stir in the chopped fresh basil into the sugo just before serving to retain its bright flavor.

Assembly

    Assemble the Dish

    In a baking dish, place the fried chicken breasts. Spoon the prepared sugo evenly over each chicken breast. Sprinkle the shredded fontina cheese generously on top.

    Transfer the baking dish to the preheated oven and bake for 20 minutes, or until the cheese is melted and bubbly.
