Method

Preparing the Calamari

    Clean and Slice

    If not pre-cleaned, clean the calamari by removing the head, insides, and skin. Rinse under cold water and slice into rings.

    Mix the Flour Mixture

    In a large bowl, combine the all-purpose flour, cornstarch, salt, black pepper, paprika, and garlic powder. Mix well.

    Coat the Calamari

    Dredge the calamari rings in the flour mixture until fully coated. Shake off any excess flour.

    Heat the Oil

    In a deep skillet or fryer, heat the vegetable oil to 180°C (350°F).

    Fry the Calamari

    Fry the calamari in batches for about 2-3 minutes or until golden brown and crispy. Remove and drain on paper towels.

Making Maggie's Sugo

    Sauté Garlic

    In a saucepan, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.

    Add Tomatoes and Seasonings

    Add crushed tomatoes, oregano, salt, and black pepper. Stir well to combine.

    Simmer the Sauce

    Reduce heat to low and let the sauce simmer for 15-20 minutes. Stir occasionally.

    Finish with Basil

    Add chopped fresh basil just before serving.

Making Scampi Sauce

    Melt Butter

    In a saucepan, melt the butter over medium heat.

    Sauté Garlic

    Add the minced garlic and sauté for about 1 minute until fragrant.

    Add Liquids and Seasonings

    Stir in the lemon juice, white wine, parsley, and red pepper flakes. Cook for an additional 2-3 minutes.

Serving

    Plate the Dish

    Serve the fried calamari hot with Maggie’s sugo and scampi sauce on the side for dipping.
