Preparation

    Prepare the Beef

    Pat the beef tenderloin medallions dry with a paper towel. Season both sides with salt and black pepper.

    Set Up Breading Station

    In three separate bowls, place the flour, beaten egg, and bread crumbs mixed with a pinch of salt and pepper.

Breading and Cooking

    Bread the Medallions

    Coat each medallion in flour, shaking off excess. Dip into the beaten egg, then coat with bread crumbs, pressing gently to adhere.

    Grill the Medallions

    Preheat the grill to medium-high heat. Grill the breaded medallions for about 4-5 minutes on each side until cooked to desired doneness.

Preparing Toppings and Sauce

    Sauté the Mushrooms

    In a skillet, heat olive oil over medium heat. Add sliced mushrooms and sauté until golden brown, about 5 minutes. Remove from heat.

    Make the Sauce

    In the same skillet, add minced garlic and sauté for 1 minute. Pour in white wine and lemon juice, bringing to a simmer. Reduce by half before whisking in butter until melted. Stir in chopped parsley.

    Once the medallions are grilled, place a slice of provolone cheese on each. Top with sautéed mushrooms and drizzle with the white wine lemon butter sauce.
