White Wine Lemon Butter Sauce
Method
Preparing the Beef Medallions

Season the Medallions
Season the beef tenderloin medallions with salt and cracked black pepper on both sides.

Sear the Medallions
In a large skillet, heat olive oil over medium-high heat. Once hot, add the beef medallions and sear for about 3-4 minutes on each side or until they reach your desired level of doneness. Remove from the skillet and set aside.
Making the White Wine Lemon Butter Sauce

Add Wine and Lemon Juice
Pour in the white wine and lemon juice. Bring to a simmer, scraping the bottom of the skillet to deglaze and incorporate all the flavors. Allow to cook for about 5 minutes until the wine reduces slightly.

Finish with Butter
Reduce heat to low and add the butter, stirring until melted and combined. Remove from heat and stir in chopped fresh parsley.
Serving

Plate the Dish
Return the seared beef medallions to the skillet, coating them in the sauce. Serve immediately with the sauce drizzled on top.
