Beef Tenderloin Preparation

    Preheat the Oven

    Preheat your oven to 400°F (200°C).

    Season the Beef

    Pat the beef tenderloin dry with paper towels. Rub the olive oil all over the tenderloin and season generously with salt, black pepper, garlic powder, and fresh rosemary.

    Sear the Beef

    In a large oven-safe skillet, heat over medium-high heat. Once hot, add the seasoned beef tenderloin and sear on all sides until browned, about 2-3 minutes per side.

    Add Butter and Finish Cooking

    Add the butter to the skillet and baste the tenderloin with the melted butter. Transfer the skillet to the preheated oven and roast until the internal temperature reaches 135°F (57°C) for medium-rare, about 20-25 minutes.

    Rest the Beef

    Remove the skillet from the oven and let the beef rest for at least 10 minutes before slicing.

Au Jus Preparation

    Prepare the Ingredients

    While the beef is resting, finely chop the onion and mince the garlic.

    Sauté Onion and Garlic

    In a saucepan, add the chopped onion and minced garlic over medium heat. Sauté until the onion is translucent and fragrant, about 5 minutes.

    Add Liquids

    Pour in the beef broth and red wine, stirring to combine. Bring to a simmer and let it reduce by half, about 10-15 minutes.

    Thicken the Au Jus

    In a small bowl, mix the cornstarch and water to create a slurry. Slowly whisk the slurry into the simmering broth and continue to cook until thickened, about 2-3 minutes.

    Add Worcestershire Sauce

    Stir in the Worcestershire sauce and season with salt and pepper to taste.
