Beef Spiedini Preparation

Season the Beef
In a large bowl, combine the beef cubes with salt, black pepper, olive oil, minced garlic, and chopped parsley. Toss until the beef is well coated. Let it marinate for at least 30 minutes at room temperature.

Assemble the Skewers
Preheat your grill or grill pan over medium-high heat. Thread the marinated beef cubes onto the soaked wooden skewers, packing them closely but not too tight. You should have about 4-5 cubes per skewer.

Grill the Skewers
Place the skewers on the preheated grill. Cook for about 10-12 minutes, turning occasionally, until the beef is browned and cooked to your desired doneness.

Mix the Sauce
In a bowl, whisk together the olive oil, red wine vinegar, minced garlic, chopped oregano, salt, and black pepper until combined. Adjust the seasoning to taste.

Remove the skewers from the grill and let them rest for a few minutes. Serve with the amogio sauce drizzled on top or on the side for dipping.
