Beef Spiedini Preparation

    Prepare the Beef

    Cut the beef tenderloin into 1-inch cubes and season with salt and black pepper. Set aside.

    Marinate the Beef

    In a bowl, mix the olive oil, minced garlic, and chopped fresh rosemary. Add the beef cubes to the marinade and toss to coat evenly. Let marinate for at least 30 minutes.

    Skewering

    After marinating, thread the beef cubes onto the skewers, leaving a little space between each piece to allow for even cooking.

Signature Amogio Preparation

    Prepare the Amogio

    In a blender, combine the olive oil, red wine vinegar, minced garlic, chopped fresh parsley, crushed red pepper flakes, and salt. Blend until smooth and well combined.

    Taste and Adjust

    Taste the Amogio and adjust seasoning if necessary. Add more salt or crushed red pepper flakes to your desired heat level.

Cooking the Beef Spiedini

    Grill the Skewers

    Preheat the grill to medium-high heat. Place the skewers on the grill and cook for about 8-10 minutes, turning occasionally, until the beef is cooked to your desired doneness.

    Serve

    Remove the skewers from the grill and let them rest for a few minutes. Serve warm drizzled with the prepared Signature Amogio.
