Prepare the Rice

    Cook the Rice

    In a medium saucepan, combine Arborio rice and chicken broth. Bring to a boil, then reduce heat to low and cover. Cook for about 18-20 minutes until rice is tender and broth is absorbed. Remove from heat and let cool.

    Mix in Seasoning

    Once the rice is cool, stir in grated Parmesan cheese, eggs, salt, and black pepper until well combined.

Prepare the Filling

    Cook the Sausage

    In a skillet over medium heat, add the Italian sausage. Break it apart with a spoon and cook until browned, about 5-7 minutes.

    Add Vegetables

    Add minced garlic, chopped onion, and frozen peas to the skillet with the sausage. Sauté for another 3-5 minutes until the onions are translucent. Remove from heat and let cool slightly.

Form the Arancini

    Shape the Balls

    Take a handful of the rice mixture and flatten it in your palm. Place a spoonful of the sausage filling in the center and mold the rice around it, forming a ball. Repeat until all ingredients are used.

Bread the Arancini

    Prepare for Breading

    Set up a breading station with three bowls: one with flour, one with beaten eggs, and one with breadcrumbs.

    Coat the Balls

    Roll each rice ball in flour, dip in beaten eggs, and finally coat with breadcrumbs. Ensure they are well-covered.

Fry the Arancini

    Heat the Oil

    In a deep pan, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Balls

    Carefully add the breaded arancini to the hot oil in batches. Fry for about 3-4 minutes, turning occasionally, until golden brown. Remove with a slotted spoon and drain on paper towels.

Prepare the Sauce

    Make the Sugo

    In a saucepan, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute. Pour in the crushed tomatoes, add basil, salt, and black pepper. Simmer for 15-20 minutes, stirring occasionally.

    Plate the Arancini

    Serve the hot arancini drizzled with Maggie's sugo on top or on the side. Enjoy your delicious seasoned rice balls!
