Marinate the Chicken
Place the chicken breasts in a resealable bag or shallow dish. Pour the marinade over the chicken, ensuring each piece is well coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes, or up to 2 hours.

Make the Stuffing
In a mixing bowl, combine the softened cream cheese, chopped jalapeños, and shredded cheddar cheese. Mix until well combined.
Grilling Chicken

Preheat the Grill
Preheat your grill to medium-high heat.

Stuff the Chicken
Take the marinated chicken breasts out of the refrigerator. Using a sharp knife, carefully cut a pocket into each chicken breast. Fill each pocket with the jalapeño cream cheese mixture.

Grill the Chicken
Place the stuffed chicken breasts on the grill. Cook for 6-7 minutes on each side or until the chicken is cooked through and has nice grill marks.

Cook the Spinach
In a large skillet over medium heat, add the minced garlic and sauté for 1 minute. Add the chopped spinach and cook until wilted.

Stir in the cream cheese, shredded Monterey Jack cheese, and sour cream into the skillet. Mix until everything is melted and combined. Season with salt and black pepper to taste.
