Preparation of Filling

    Prepare the Cream Cheese Mixture

    In a medium mixing bowl, combine the cream cheese and powdered sugar. Use a hand mixer to blend until smooth and creamy.

    Melt the Chocolate

    In a microwave-safe bowl, heat the semi-sweet chocolate chips in the microwave in 30-second intervals until melted, stirring in between. Once melted, add the chocolate to the cream cheese mixture and mix until well combined.

    Add Cinnamon

    Stir in the cinnamon into the cream cheese and chocolate mixture until evenly distributed.

Assembling the Chimichangas

    Fill the Tortillas

    Take a chocolate tortilla and place about 2 tablespoons of the cream cheese and chocolate filling in the center. Fold the sides over the filling and then roll it up tightly to form a chimichanga. Repeat with remaining tortillas and filling.

Frying the Chimichangas

    Heat the Oil

    In a large skillet or deep fryer, heat the oil over medium-high heat until it reaches about 350°F (175°C).

    Fry the Chimichangas

    Carefully place the chimichangas in the hot oil, a few at a time, and fry until golden brown, about 2-3 minutes per side. Remove and drain on paper towels.

Serving

    Plate the Chimichangas

    Place the fried chimichangas on a serving plate. Top with a scoop of vanilla ice cream, then drizzle with caramel and chocolate syrup as desired.
