Preparation

  1. 1

    Prepare the Vegetables

Wash and chop the fresh spinach, jalapeños, onion, and bell pepper into small pieces. If you prefer less heat, remove the seeds from the jalapeños.

  2. 2

    Sauté the Vegetables

In a large skillet, heat the olive oil over medium heat. Add the chopped onion and bell pepper, and sauté for about 3-4 minutes until they soften. Then add the chopped jalapeños and continue to sauté for another 2 minutes.

Cooking

  1. 3

    Add Spinach

Add the chopped spinach to the skillet. Cook until the spinach wilts, which should take about 2-3 minutes. Stir occasionally to ensure even cooking.

  2. 4

    Mix in Cheese and Spices

Reduce the heat to low and add the cream cheese, shredded cheese, and sour cream to the skillet. Stir until the cheeses are melted and everything is well combined. Season with garlic powder, cumin, salt, and black pepper, stirring until evenly distributed.

Serving

  1. 5

    Serve Warm

Transfer the espinaca con queso to a serving dish and serve warm with tortilla chips or fresh vegetables for dipping.
