Method

Preparation

  1. 1

    Cook the Filling

In a skillet over medium heat, add the ground beef, chopped onion, chopped bell pepper, and minced garlic. Cook until the beef is browned and the vegetables are tender, about 5-7 minutes. Drain any excess fat.

  2. 2

    Season the Filling

Stir in the chili powder, cumin, salt, and black pepper. Mix well and cook for an additional 2-3 minutes. Remove from heat and let the filling cool slightly.

Assemble the Chimichangas

  1. 3

    Fill the Tortillas

Take a flour tortilla and place about 1/4 cup of the filling in the center. Sprinkle with shredded cheese.

  2. 4

    Fold the Tortilla

Fold the sides of the tortilla over the filling, then roll it up from the bottom to enclose the filling completely. Repeat with remaining tortillas.

Cook the Chimichangas

  1. 5

    Fry the Chimichangas

In a deep skillet or fryer, heat oil over medium heat. Carefully place the chimichangas seam side down into the hot oil. Fry until golden brown, about 3-4 minutes per side. Drain on paper towels.

  2. 6

    Smother with Sauce

Place the fried chimichangas on a serving plate and smother with enchilada sauce.

Serve

  1. 7

    Garnish and Serve

Top with sour cream and chopped cilantro. Serve immediately.
