Tamale Dough

    Prepare the Corn Husk

    Soak the corn husks in warm water for at least 30 minutes to soften them. Drain and set aside.

    Mix the Dough

    In a large bowl, combine masa harina, baking powder, and salt. In a separate bowl, beat together lard and broth, then mix into the dry ingredients until a soft dough forms.

Beef Filling with Red Sauce

    Cook the Beef

    In a skillet over medium heat, cook the onion until translucent. Add garlic and ground beef, cooking until browned. Drain excess fat.

    Add Seasoning

    Stir in chili powder, cumin, tomato sauce, salt, and pepper. Simmer for 10 minutes, allowing flavors to meld. Set aside to cool.

Green Corn Filling with Green Sauce

    Prepare the Corn Filling

    In a bowl, combine fresh corn, chopped green chiles, cream cheese, green salsa, salt, and pepper. Mix until well combined.

Assembly and Cooking

    Assemble the Tamales

    Take a soaked corn husk and spread about 1/4 cup of the tamale dough onto the center. Add 2 tablespoons of either beef filling or green corn filling on top. Fold the sides of the husk over the filling, then fold the bottom up to secure.

    Steam the Tamales

    Place the tamales upright in a steamer basket. Steam over boiling water for about 1 to 1.5 hours, or until the dough is firm and pulls away from the husk easily.
