Preparing the Pork

Prepare the Marinade
In a blender, combine guajillo chiles, ancho chiles, garlic, cumin, oregano, salt, black pepper, white vinegar, and orange juice. Blend until smooth.

Marinate the Pork
Cut the pork shoulder into large chunks and place in a bowl. Pour the marinade over the pork, ensuring all pieces are well coated. Cover and refrigerate for at least 4 hours, preferably overnight.

Once cooked, let the pork rest for a few minutes, then chop into small pieces.

Prepare the Tortillas
Warm the corn tortillas on the grill for about 30 seconds on each side or until pliable.

Place a generous amount of chopped pork on each tortilla. Top with grilled pineapple, diced red onion, cilantro, and shredded green cabbage.
