Method

Preparing the Pork

    Prepare the Marinade

    In a blender, combine guajillo chiles, ancho chiles, garlic, cumin, oregano, salt, black pepper, white vinegar, and orange juice. Blend until smooth.

    Marinate the Pork

    Cut the pork shoulder into large chunks and place in a bowl. Pour the marinade over the pork, ensuring all pieces are well coated. Cover and refrigerate for at least 4 hours, preferably overnight.

Cooking the Pork

    Grill the Pork

    Preheat a grill to medium-high heat. Remove pork from marinade and shake off excess marinade. Grill the pork for about 15-20 minutes, turning occasionally, until it is caramelized and cooked through.

    Grill the Pineapple

    While the pork is grilling, slice the pineapple into rings. Add the pineapple to the grill and cook until grill marks appear, about 3-4 minutes per side. Remove and let cool slightly.

    Chop the Pork

    Once cooked, let the pork rest for a few minutes, then chop into small pieces.

Making the Pineapple Salsa

    Prepare the Salsa

    Dice the grilled pineapple and combine it in a bowl with diced red onion, cilantro, lime juice, and salt. Mix well and set aside.

Assembling the Tacos

    Prepare the Tortillas

    Warm the corn tortillas on the grill for about 30 seconds on each side or until pliable.

    Assemble the Tacos

    Place a generous amount of chopped pork on each tortilla. Top with grilled pineapple, diced red onion, cilantro, and shredded green cabbage.

    Serve the tacos warm with pineapple salsa, roasted jalapeño peppers, and lime wedges on the side.
