Steak Preparation

    Marinate the Steak

    In a bowl, combine the olive oil, lime juice, garlic powder, cumin, paprika, salt, and black pepper. Add the fajita steak, ensuring it's fully coated. Cover and marinate for at least 30 minutes, or up to 2 hours in the refrigerator.

    Grill the Steak

    Preheat the grill to medium-high heat. Remove the steak from the marinade and grill for about 5-7 minutes on each side, or until it reaches your desired doneness. Remove from the grill and let it rest for 5 minutes before slicing.

Enchilada Preparation

    Prepare the Enchiladas

    Preheat your oven to 350°F (175°C). In a baking dish, spread a thin layer of red enchilada sauce on the bottom. Take a corn tortilla, fill it with cheese, and roll it up. Place it seam side down in the baking dish. Repeat with remaining tortillas.

    Add Sauce and Cheese

    Once all tortillas are in the dish, pour the remaining red enchilada sauce over the top, then sprinkle with the remaining shredded cheese.

    Bake

    Cover the baking dish with foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.

    Garnish

    Once baked, remove from the oven and top with sour cream and chopped cilantro before serving.

Green Sauce Preparation

    Make the Green Sauce

    In a blender, combine the fresh cilantro, parsley, jalapeño, garlic clove, lime juice, salt, and olive oil. Blend until smooth. Adjust seasoning to taste.
