Dough Preparation

Mix Dry Ingredients
In a large bowl, combine the all-purpose flour, baking powder, and salt. Whisk together until well mixed.

Add Shortening
Add the shortening to the flour mixture and mix using your fingers or a pastry cutter until the mixture resembles coarse crumbs.

Add Wet Ingredients
Gradually mix in the warm water and milk until a soft dough forms. You may need to adjust the water or flour slightly to achieve a workable dough.

Knead the Dough
Transfer the dough to a lightly floured surface and knead for about 2-3 minutes until smooth. Cover with a clean cloth and let it rest for 20 minutes.

Mix Cream Cheese Filling
In a small bowl, combine the cream cheese, powdered sugar, and vanilla extract. Mix until smooth and creamy. Set aside.
Sopapilla Assembly

Roll Out Dough
After the dough has rested, roll it out on a floured surface to about 1/8 inch thick.

Cut the Dough
Cut the rolled dough into squares or triangles, about 3 inches in size.

Fill the Dough
Place a teaspoon of the cream cheese filling in the center of each piece of dough. Fold the dough over to create a pocket and press the edges to seal.

Fry Sopapillas
Carefully place a few sopapillas in the hot oil, being careful not to overcrowd the pot. Fry for about 2-3 minutes on each side, or until golden brown.

Drain and Cool
Using a slotted spoon, remove the sopapillas from the oil and place them on paper towels to drain excess oil.
