Prepare Vegetables

    Slice Vegetables

    Slice the bell peppers and onion into thin strips.

    Sauté Vegetables

    In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the sliced bell peppers and onion, and sprinkle with fajita seasoning. Sauté for about 5-7 minutes until the vegetables are tender and slightly charred.

Make Guacamole

    Prepare Avocado

    Cut the avocados in half, remove the pit, and scoop the flesh into a bowl.

    Mix Guacamole

    Mash the avocado with a fork, then add lime juice, salt, diced tomato, and chopped cilantro. Mix until combined and set aside.

Prepare Toppings

    Set Toppings

    In separate bowls, prepare the shredded cheese, pico de gallo, and sour cream for serving.

Warm Tortillas and Rice

    Warm Tortillas

    Wrap the flour tortillas in aluminum foil and place them in a preheated oven at 350°F (175°C) for about 10 minutes to warm.

    Cook the Spanish rice according to package instructions while the tortillas are warming.

Serve Fajitas

    Once the vegetables are done, serve them sizzling in the skillet. Allow guests to build their own fajitas with the warm tortillas, guacamole, cheese, pico de gallo, and sour cream.

    Heat the refried beans in a small pot over medium heat until warmed through, serve alongside the fajitas.
