Prepare Seafood Medley

Cook the Seafood
In a skillet, heat 1 tablespoon of olive oil over medium heat. Add shrimp, crab meat, and scallops. Season with cumin, paprika, salt, and pepper. Cook for about 5-7 minutes or until cooked through. Remove from heat and let cool.
Prepare Filling

Mix the Filling
In a mixing bowl, combine the cooked seafood medley, cheddar cheese, chopped cilantro, and diced jalapeños. Blend well.

Prepare the Tortillas
Take a flour tortilla and place a generous amount of the seafood filling in the center. Fold the tortilla over the filling and press down to seal.
Fry the Tortillas

Fry the Fundido
In a large skillet, heat the remaining tablespoon of olive oil over medium-high heat. Place the stuffed tortillas in the skillet and fry until golden brown and crispy on both sides, about 3-4 minutes per side.
Prepare Toppings

Prepare Jalapeño Cream Cheese
In a small bowl, mix cream cheese with finely chopped additional jalapeños. Spread over the crispy tortillas.

Add Jack Cheese
Sprinkle jack cheese over the top of the tortillas and allow it to melt slightly.
