Main Ingredients

Method

Cooking the Beef

  1. 1

    Sear the Beef

In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the beef cubes, season with salt and black pepper, and sear them until browned on all sides, about 5-7 minutes.

  2. 2

    Add Spices

Stir in the red chili powder, cumin, and garlic powder. Cook for another 2 minutes until the spices are fragrant.

  3. 3

    Simmer

Pour in the beef broth and bring to a boil. Reduce the heat to low, cover, and let it simmer for 2-3 hours or until the beef is tender.

Final Assembly

  1. 4

    Prepare the Tortillas

While the beef is simmering, warm the flour tortillas in a dry skillet over medium heat for about 30 seconds on each side or until they are pliable.

  2. 5

    Serve the Dish

Once the beef is tender, stir in the sliced jalapeños and let it cook for an additional 10 minutes. Serve the Red Chili Colorado in bowls, topped with shredded cheese and pico de gallo. Use the warm tortillas to scoop up the chili.
