Cook the Chorizo
In a skillet over medium heat, cook the chorizo sausage until browned and cooked through, about 5-7 minutes. Use a wooden spoon to break it apart as it cooks.

Prepare the Cheese Mixture
In a large mixing bowl, combine the Monterey Jack cheese, Chihuahua cheese, and cream cheese. Mix until well combined.

Combine Ingredients
Once the chorizo is cooked, reduce the heat to low and add the cheese mixture to the skillet. Stir gently until the cheese begins to melt and become creamy, about 3-5 minutes.

Prepare Tortillas
While the cheese is melting, warm the corn tortillas in a separate pan over medium heat for about 30 seconds on each side until soft and pliable.

Plate and Garnish
Transfer the melted queso fundido to a serving dish. Top with fresh cilantro, diced jalapeños, and a dollop of sour cream.

Serve the queso fundido hot with the warm corn tortillas on the side for dipping.
