Preparation of Taco Filling

Cook Chorizo
In a skillet over medium heat, add the chorizo sausage. Cook, breaking it apart with a spatula, until browned and cooked through, about 5-7 minutes.

Prepare Toppings
While the filling is cooking, prepare the taco toppings. Shred the green cabbage, thinly slice the red onion, chop the fresh cilantro, and slice the avocado. Set aside.

Roast Jalapeño
Over an open flame or in the oven, roast the jalapeño until charred. Allow to cool slightly, then slice.
Assemble Tacos

Warm Tortillas
In a separate skillet, warm the corn tortillas over medium heat for about 30 seconds on each side until pliable.

Fill Tortillas
Place a generous spoonful of the chorizo and shrimp mixture into the center of each tortilla.

Serve immediately with lime wedges and roasted jalapeño on the side.
