Preparation of Taco Filling

    Cook Chorizo

    In a skillet over medium heat, add the chorizo sausage. Cook, breaking it apart with a spatula, until browned and cooked through, about 5-7 minutes.

    Add Shrimp

    Add the shrimp to the skillet with the cooked chorizo. Sprinkle with cumin, paprika, salt, and black pepper. Cook until shrimp are pink and opaque, about 3-5 minutes.

    Incorporate Garlic

    Stir in the minced garlic and olive oil. Cook for an additional 1-2 minutes until fragrant. Remove from heat and set aside.

    Prepare Toppings

    While the filling is cooking, prepare the taco toppings. Shred the green cabbage, thinly slice the red onion, chop the fresh cilantro, and slice the avocado. Set aside.

    Roast Jalapeño

    Over an open flame or in the oven, roast the jalapeño until charred. Allow to cool slightly, then slice.

Assemble Tacos
