Preparing the Chicken

Grilling the Chicken
Preheat your grill to medium-high heat. Season the chicken breasts with olive oil, salt, and black pepper. Place the chicken on the grill and cook for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C). Remove the chicken from the grill and let it rest for 5 minutes.

Shredding the Chicken
Once the chicken has rested, use two forks to shred the chicken into thin pieces. Set aside.

Preparing Red Salsa
In a separate blender, combine red tomatoes, onion, and lime juice. Blend until smooth. Season with salt to taste.
Assembling the Flautas

Rolling the Flautas
Take a low-fat flour tortilla and place a portion of shredded chicken in the center. Roll it tightly and secure with a toothpick if necessary. Repeat with remaining tortillas.

Plating the Dish
On a serving plate, arrange the grilled flautas. Top with tomatillo salsa and red salsa. Serve alongside charro beans, sautéed mixed bell peppers and onions, and a dollop of low-fat sour cream.
