Chicken Marinade

Method

Marinating the Chicken

  1. 1

    Prepare the Marinade

In a large bowl, whisk together lime juice, tequila, olive oil, minced garlic, chopped cilantro, salt, and black pepper.

  2. 2

    Marinate the Chicken

Add the chicken breasts to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes to 2 hours.

Grilling the Chicken

  1. 3

    Preheat the Grill

Heat your grill to medium-high heat.

  2. 4

    Grill the Chicken

Remove chicken from marinade and grill for 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C). Remove from grill and let rest for 5 minutes before slicing.

Sautéing the Vegetables

  1. 5

    Sauté the Vegetables

In a skillet, heat olive oil over medium heat. Add sliced bell peppers, red onion, and zucchini. Season with salt and black pepper. Cook for about 5-7 minutes, until vegetables are tender.

Assembling the Burritos

  1. 6

    Prepare the Tortillas

Lay out the flour tortillas on a flat surface. Spread jalapeño cream cheese evenly over each tortilla.

  2. 7

    Add the Fillings

Layer sliced grilled chicken, sautéed vegetables, and shredded cheese on top of the cream cheese.

  3. 8

    Wrap the Burritos

Fold the sides of the tortilla over the filling, then roll it up tightly from the bottom. Repeat with remaining tortillas.

  4. 9

    Grill the Burritos

In a skillet, add a little olive oil and heat over medium heat. Place burritos seam-side down in the skillet. Grill for 2-3 minutes on each side until golden brown and crispy.

  5. 10

    Serve

Serve the grilled burritos with green sauce on the side.
