Method

Preparation

  1. 1

    Prepare the Filling

In a large mixing bowl, combine shredded chicken, shredded beef, cooked ground beef, refried beans, and your choice of chili verde or red chili sauce. Mix well until all ingredients are evenly incorporated.

  2. 2

    Preheat the Oven

Preheat your oven to 350°F (175°C) to prepare for baking the chimichangas.

Assembling the Chimichangas

  1. 3

    Fill the Tortillas

Take a flour tortilla and place about 1 cup of the filling mixture in the center of the tortilla. Be careful not to overfill.

  2. 4

    Fold the Tortilla

Fold the sides of the tortilla inward, then roll it up tightly from the bottom to the top to secure the filling inside. Repeat this for all tortillas.

Baking

  1. 5

    Prepare for Baking

Place the filled chimichangas seam-side down on a baking sheet lined with parchment paper. Brush the tops lightly with oil to help them crisp up.

  2. 6

    Bake the Chimichangas

Bake in the preheated oven for 20-25 minutes or until golden brown and crispy.

Serving

  1. 7

    Add Sauce and Toppings

Once baked, remove from the oven. Place each chimichanga on a serving plate, smother with enchilada sauce, and top with shredded cheese, sour cream, chopped cilantro, sliced jalapeños, and avocado.

  2. 8

    Enjoy!

Serve hot and enjoy your delicious Grande Chimichangas!
