Caramel Preparation

Make the Caramel
In a medium saucepan, combine the granulated sugar and water. Heat over medium-low heat, stirring until the sugar has dissolved.

Cook the Caramel
Once the sugar has dissolved, stop stirring and allow the mixture to boil. Watch carefully as it turns a golden amber color. This will take about 10-15 minutes.

Pour the Caramel
As soon as the caramel reaches the desired color, carefully pour it into a round flan mold or individual ramekins, tilting to coat the bottom evenly. Set aside to cool and harden.

Preheat the Oven
Preheat your oven to 350°F (175°C).

Blend the Custard Ingredients
In a large mixing bowl, whisk together the eggs. Then, add the sweetened condensed milk, evaporated milk, and vanilla extract. Mix well until smooth and fully combined.

Pour the Custard into Mold
Carefully pour the custard mixture over the hardened caramel in the mold, ensuring not to disturb the caramel layer.

Prepare for Baking
Place the flan mold in a larger baking dish and fill the dish with hot water until it reaches halfway up the sides of the flan mold. This will create a water bath.

Bake the Flan
Bake in the preheated oven for 50-60 minutes, or until the custard is set and a knife inserted in the center comes out clean.

Cool and Serve
Remove the flan from the water bath and let it cool at room temperature. Once cooled, refrigerate for at least 4 hours or overnight. To serve, run a knife around the edges and invert onto a serving plate.
