    Cook the Meat

    In a large skillet, heat the olive oil over medium heat. Add the ground beef, cooking until browned and fully cooked, about 7-10 minutes. If using shredded chicken or beef, heat them through in the skillet for about 5 minutes.

    Add Vegetables

    Add the diced onion, minced garlic, and bell pepper (and jalapeño, if using) to the skillet. Sauté until the vegetables are softened, about 5-7 minutes.

    Season the Mixture

    Stir in the chili powder, cumin, salt, and black pepper. Mix well to combine and let cook for another 2 minutes.

Assembling the Enchiladas

    Prepare Tortillas

    Preheat your oven to 375°F (190°C). Spread a small amount of enchilada sauce on the bottom of a large baking dish.

    Fill the Tortillas

    Take a tortilla and add a generous scoop of the meat and vegetable mixture in the center. Top with a sprinkle of shredded cheese, then roll the tortilla tightly.

    Place in Baking Dish

    Place the rolled tortilla seam-side down in the baking dish. Repeat until all tortillas are filled and placed in the dish.

    Add Sauce and Cheese

    Pour the remaining enchilada sauce over the top of the filled tortillas, ensuring they are well covered. Sprinkle any remaining cheese on top.

Baking

    Bake the Enchiladas

    Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10-15 minutes until the cheese is melted and bubbly.

Serving

    Garnish and Serve

    Remove from the oven and let cool for a few minutes. Top with sour cream and fresh cilantro before serving.
