Method

Preparation

  1. 1

    Prepare the Corn

Bring a large pot of salted water to a boil. Add the corn on the cob and boil for about 5-7 minutes, or until the corn is tender. Remove the corn from the water and let it cool slightly.

  2. 2

    Make the Sauce

In a medium bowl, mix together the mayonnaise, sour cream, lime juice, garlic powder, and salt until smooth and well combined.

  3. 3

    Prepare the Cotija Cheese

Crumble the Cotija cheese into small pieces and set aside.

Assembly

  1. 4

    Coat the Corn

Once the corn has cooled enough to handle, use a brush or your hands to generously slather the creamy sauce mixture all over each ear of corn.

  2. 5

    Add Cheese and Spice

Sprinkle the crumbled Cotija cheese evenly over the coated corn, followed by a sprinkle of chili powder. Adjust the amounts to your taste.

  3. 6

    Serve

Cut the fresh limes into wedges and serve alongside the elote. Enjoy immediately while the corn is warm!
