Prepare the Tortillas
Stack the corn tortillas and cut them into triangles, creating 6-8 pieces per tortilla.

Heat the Oil
In a large, heavy-bottomed pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Chips
Carefully add a handful of tortilla triangles to the hot oil and fry for 2-3 minutes or until they are golden brown and crispy. Do not overcrowd the pot.

Drain and Season
Using a slotted spoon, remove the chips from the oil and place them on a plate lined with paper towels to drain excess oil. While still hot, sprinkle with salt to taste.

Mix the Salsa
In a large bowl, combine the diced tomatoes, red onion, jalapeño, and cilantro.

Add Lime Juice and Season
Pour in the lime juice and sprinkle with salt. Mix well to combine all ingredients.

Adjust to Taste
Taste the salsa and adjust seasoning with additional salt or lime juice if needed.
