    Sauté the Vegetables

    In a large skillet over medium heat, add a drizzle of oil. Sauté the diced onion until translucent, about 3-5 minutes. Add minced garlic and cook for another minute until fragrant.

    Add Chicken and Spices

    Stir in the shredded cooked chicken, cumin, chili powder, salt, and black pepper. Mix well until everything is combined and heated through, about 3-5 minutes. Remove from heat and stir in chopped cilantro.

Enchilada Assembly

    Preheat Oven

    Preheat your oven to 375°F (190°C).

    Prepare Tortillas

    Warm the corn tortillas in a dry skillet or microwave until pliable, about 20-30 seconds.

    Fill Tortillas

    Take one tortilla, place about 1/3 cup of the chicken filling in the center, and roll it up. Repeat this process with the remaining tortillas and filling.

    Assemble in Baking Dish

    Spread a thin layer of enchilada sauce on the bottom of a baking dish. Place the filled enchiladas seam-side down in the dish. Pour the remaining enchilada sauce over the top of the enchiladas.

    Add Cheese

    Sprinkle the shredded cheese evenly over the enchiladas.

    Bake

    Cover with foil and bake in the preheated oven for 20 minutes. Then remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.

    Serve

    Remove from the oven and let it cool for a few minutes before serving. Garnish with additional cilantro if desired.
