Cooking the Pork

Prepare the Pork
Trim excess fat from the pork shoulder and cut it into large chunks.

Slow Cook the Pork
Place the seasoned pork into a slow cooker. Add lime juice, chicken broth, and bay leaves. Cover and cook on low for 8 hours, or until the pork is tender and easily shreds.

Shred the Pork
Once cooked, remove the pork from the slow cooker and shred it using two forks. Discard bay leaves.

Prepare the Cabbage
In a bowl, add shredded red cabbage. You can toss it with a little lime juice and salt if desired.
Assembling the Tacos

Warm the Tortillas
In a dry skillet, warm the corn tortillas for about 30 seconds on each side until pliable.

Build the Tacos
Take a warm tortilla, add a generous amount of shredded pork, top with grilled red onions, shredded red cabbage, pico de gallo, and a dollop of guacamole.

Serve
Repeat the process for all tortillas, serve immediately, and enjoy your carnitas tacos!
