For the Shrimp

Method

Preparing the Shrimp

  1. 1

    Sautéing the Vegetables

In a large skillet, heat the olive oil over medium heat. Add the sliced onions and bell peppers, cooking until they are soft and slightly caramelized, about 5-7 minutes.

  2. 2

    Cooking the Shrimp

Add the minced garlic and sauté for an additional minute. Then, add the shrimp, chipotle peppers, salt, and black pepper. Cook until the shrimp turn pink and opaque, about 3-5 minutes. Remove from heat and set aside.

Preparing the Carne Asada Tortilla

  1. 3

    Grilling the Tortillas

In a separate skillet, melt the butter over medium heat. Add each flour tortilla and cook for about 30 seconds on each side until warm and slightly golden.

  2. 4

    Assembling the Tortillas

Layer each tortilla with a generous portion of grilled carne asada, sliced avocado, mixed cheese, and pico de gallo.

Serving the Dish

  1. 5

    Plating

Serve the shrimp alongside the filled tortillas. Add a dollop of sour cream on the side. Accompany with Spanish rice and beans to complete the meal.
