    Sauté the Vegetables

    In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sauté until translucent. Then add the sliced mushrooms and cook until softened. Finally, add the chopped spinach and cook until wilted. Season with salt and pepper to taste.

    Fill the Tortillas

    Warm the corn tortillas in a dry skillet or microwave to make them pliable. Place a portion of the sautéed vegetable mixture in the center of each tortilla, top with a sprinkle of jalapeño cheese, and roll up tightly.

    Prepare the Baking Dish

    Preheat the oven to 350°F (175°C). Spread a thin layer of enchilada sauce on the bottom of a baking dish.

    Assemble the Enchiladas

    Place the rolled tortillas seam-side down in the baking dish. Pour the remaining enchilada sauce over the top and sprinkle with any remaining jalapeño cheese.

    Bake

    Cover with foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.

    Serve

    Remove from the oven and let cool for a few minutes. Garnish with chopped cilantro before serving.
