    Prepare the Filling

    In a large mixing bowl, combine refried beans, cooked rice, diced tomatoes, chopped onion, and half of the shredded cheese. Season with salt and pepper to taste.

    Assemble the Burritos

    Lay a tortilla flat and place a generous amount of the filling mixture in the center. Roll the sides over the filling and then roll from the bottom to the top to form a burrito. Repeat with remaining tortillas.

    Prepare the Baking Dish

    Preheat the oven to 375°F (190°C). Lightly grease a baking dish with olive oil.

    Fill the Baking Dish

    Place the burritos seam side down in the prepared baking dish. Pour the enchilada sauce evenly over the top of the burritos.

    Add Toppings

    Sprinkle the remaining shredded cheese over the sauce, and add a dollop of sour cream on top of each burrito.

    Cover the baking dish with foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
