Gumbo

Method

Gumbo

    Make the Roux

    In a large pot, heat olive oil over medium heat. Add flour and whisk constantly until the roux turns dark brown in color, about 15-20 minutes.

    Sauté Vegetables

    Add onion, bell pepper, and celery to the pot, and sauté for 5 minutes until softened.

    Add Ingredients

    Stir in garlic, sausage, chicken, shrimp, chicken broth, diced tomatoes, Cajun seasoning, bay leaves, salt, and pepper. Bring to a boil, then reduce heat and simmer for 30 minutes.

    Finish and Serve

    Remove bay leaves, stir in green onions, and serve hot.

Red Beans & Rice

    Sauté Vegetables

    In a pot, heat olive oil over medium heat. Add onion, bell pepper, celery, and garlic; sauté until softened.

    Add Beans

    Add red beans, chicken broth, bay leaf, Cajun seasoning, salt, and pepper. Bring to a simmer and cook for 20 minutes.

    Serve

    Serve over cooked rice.

Jambalaya

    Sauté Ingredients

    In a large pot, heat olive oil over medium heat. Add onion, bell pepper, celery, and garlic; sauté until softened.

    Add Proteins

    Stir in sausage, chicken, and shrimp; cook until browned.

    Add Rice and Broth

    Add canned tomatoes, rice, chicken broth, Cajun seasoning, bay leaves, salt, and pepper. Bring to a boil, then reduce heat and simmer for 20-25 minutes until rice is cooked.

    Finish and Serve

    Remove bay leaves, stir in green onions, and serve hot.
