Fried Alligator Bites

Preparation
Marinate Alligator
In a large bowl, soak the cubed alligator meat in buttermilk for at least 1 hour, or overnight in the refrigerator for best results.
Prepare the Breading
In a shallow dish, combine cornmeal, flour, cayenne pepper, garlic powder, onion powder, salt, and black pepper. Mix well.
Coat the Alligator
Remove the alligator pieces from the buttermilk and let the excess drip off. Dredge each piece in the cornmeal mixture until fully coated.
Heat the Oil
In a deep skillet or frying pan, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).
Fry the Alligator Bites
Carefully add the coated alligator bites to the hot oil in batches, making sure not to overcrowd the pan. Fry for about 4-5 minutes, or until golden brown and crispy.
Drain and Serve
Remove the fried alligator bites with a slotted spoon and drain on paper towels. Serve hot with remoulade dipping sauce.
