Prepare the Filling
In a skillet over medium heat, melt 1 tablespoon of butter. Add the chopped onions and diced red bell pepper, and sauté until soft, about 3-4 minutes. Add the shrimp and crawfish, cooking until the shrimp turns pink and the crawfish is heated through, about 3-5 minutes. Season with salt and black pepper. Remove from heat and set aside.

Make the Omelette
In a bowl, whisk the eggs with a pinch of salt and black pepper until well combined. In a non-stick skillet, melt the remaining tablespoon of butter over medium heat. Pour in the egg mixture, swirling it to cover the bottom of the skillet. Cook until the edges begin to set, about 2 minutes.

Add the Filling and Cheese
Once the omelette is partially set, add the seafood filling to one half of the omelette. Sprinkle the shredded cheddar cheese on top of the filling. Carefully fold the other half of the omelette over the filling.

Finish Cooking
Let the omelette cook for another 2-3 minutes, until the cheese is melted and the center is fully cooked. Slide the omelette onto a plate and serve immediately.
