    Prepare the Red Snapper

    Preheat your grill to medium-high heat. Season the red snapper fillets with olive oil, salt, black pepper, and lemon juice. Let them marinate for about 15 minutes.

    Grill the Fish

    Place the fillets on the grill and cook for 4-5 minutes on each side or until the fish flakes easily with a fork. Remove from grill and set aside.

    Make the Crawfish Sauce

    In a saucepan, heat olive oil over medium heat. Add minced garlic and sauté until fragrant. Add the crawfish tails, paprika, and heavy cream. Stir and let simmer for about 5-7 minutes until the sauce thickens. Add chopped green onions at the end.

    Prepare the Vegetables

    While the sauce simmers, grill or sauté the seasonal vegetables until tender, about 5-7 minutes.

    Serve

    Place the grilled red snapper on a plate, top with crawfish sauce, and serve alongside the seasonal veggies and side of choice.
