    Prepare the Ingredients

    Rinse the red beans and soak them in water overnight. Drain before using. Chop the onion, green bell pepper, celery, and garlic.

    Sauté the Vegetables

    In a large pot, heat the olive oil over medium heat. Add the chopped onion, green bell pepper, and celery. Sauté until the vegetables are soft, about 5-7 minutes. Add the garlic and sauté for another 1-2 minutes.

    Cook the Beans

    Add the soaked red beans, vegetable broth, bay leaves, thyme, cumin, paprika, salt, and black pepper to the pot. Bring to a boil, then reduce the heat and simmer for about 1 hour or until the beans are tender.

    Cook the Rice

    While the beans are cooking, prepare the rice according to package instructions.

    Combine and Serve

    Once the beans are tender, remove the bay leaves. Serve the red beans over the cooked rice and add hot sauce to taste.
